Sparkling Wine Extra Brut

The new Buchegger Sekt Extra Brut is a single-varietal Chardonnay sparkling wine whose grapes were harvested by hand at a very early stage. The first fermentation took place partly in steel tanks and partly in used wooden barrels, where the base wine was allowed to mature for a year before being bottled according to the “Méthode Traditionelle” with yeast and a tirage liqueur added. And again the sparkling wine was allowed to rest, this time even for 30 months.
To move the yeast from the bottom of the bottle to the neck of the bottle, the bottles were placed upside down on riddling pulleys, and each day they were swayed and turned a little by hand. Then the neck of the bottle was immersed in a cold brine bath, thus freezing the yeast – this allows the bottle to be opened and the yeast ice plug removed (the technical term for this is disgorgement). Finally, the bottle was sealed with a natural cork.
Due to the long bottle aging on the yeast, our Sekt Extra Brut has a very fine perlage. It is a fruity, accessible sparkling wine with finesse – full and fine at the same time.

The Sparkling wine Extra Brut is available as a 0.75 l bottle and in the 1.5 l magnum.
