The third vintage of our Grosse Reserve Extra Brut was given a long time to mature into what we believe is an outstanding sparkling wine. The Chardonnay grapes were harvested in the autumn of 2017 after a rather cool vintage – perfect for a sparkling base wine with harmonious acidity. Fermentation in steel tanks and malolactic fermentation were followed by twelve months of ageing, partly in new and partly in used wooden barrels. In the autumn of 2018, the wine was bottled with the addition of yeast according to the ‘Méthode Traditionelle’ for a second fermentation. The bottles were then transferred to our sparkling wine cellar in Gedersdorf, an old, cool, dark cellar tube where the sparkling wine could mature in absolute peace and quiet
Matured for 42 months
To qualify as a Great Reserve, the sparkling wine must be aged on the lees for at least 36 months. We allowed our sparkling wine to rest for a further six months until we were satisfied with the result: A single-varietal Chardonnay sparkling wine with great elegance and cool but balanced fruit, juicy, creamy and with the finest perlage on the palate, definitely with woody notes and a long finish. In short, a great sparkling wine for special occasions!
